I started my evening with something simple. I had a banana that was about to go bad that I didn't want to throw away, so I pulled out my trusty copy of Better Home and Garden's cookbook and baked some wonderful banana bread. But that's not exciting. It looked and smelled wonderful though!
More importantly though, I found a recipe for zucchini brownies from A Family Feast on Pinterest. I have to say, these are really good brownies. The ones I made here I took to work the next day and they didn't last long. People started telling one another about them after I mentioned it to a couple of people and they started to disappear. Then, I started to get requests. Ok. I think that last part was more that the TAs liked me having baked goods in my office so they could grab a snack. I'm ok with it. I don't mind. I like baking. I like trying new recipes. I just can't eat it all before it goes bad! True to style, I didn't have any Bakers chocolate when I first made them, so I used Nestle's semi-sweet morsels. I'm also not a fan of nuts in my brownies, so I left them out. I also don't really have a nice walled baking pan anymore, so I used my Pamper's Chef stoneware baking sheet which I'd never used before... I didn't want to risk good brownies sticking to the pan and since these are said to be very moist, I didn't take any chances. I had some parchment paper sitting around, so I put it to use by lining my pan with it. Definitely made it easy to pull the brownies out all in one move! |
