Today's recipe experiment comes yet again from Pinterest. This time, from The Kitchn's Slow Cooker Chicken Tikka Masala. The recipe was easy to follow and I managed to get myself a coupon for two quarts of coconut milk at Meijer's. I prepared all the ingredients the night before and filled up my Crock Pot. I pulled it out before I left for work at 7:20 am and plugged her in. Sadly, I didn't get home until nearly 6pm and my Crock Pot doesn't have an autowarm feature, so it continued to cook for more than 10 hours! blah! Everything tasted burnt! At that point, it didn't even taste good. I ended up eating a a little and throwing the rest out. I need to invest in a new slow cooker. A friend of mine from work suggested I use my Christmas tree lights timer on it and set it to turn off after 8 hours. She seemed to think that the food would stay warm enough that I wouldn't need to worry about it. I'll have to give this one another try.

Pinterest strikes again! Tonight it is to use some of my home-grown zucchini that I had frozen during the summer to create a yummy snack. I started my evening with something simple. I had a banana that was about to go bad that I didn't want to throw away, so I pulled out my trusty copy of Better Home and Garden's cookbook and baked some wonderful banana bread. But that's not exciting. It looked and smelled wonderful though! Smell the banana bread!
So I've challenged myself to try random recipes I find on Pinterest. This week, I'm stress baking. My solution to dealing with problems, so the outcome in no way shape or form has to look good, but it does have to taste good. And be shared. I can't eat it all myself! I'll have to say, I loved the flavor of this pumpkin roll. I also have to say, my roll had absolutely no shape to it and I really stick at making cream cheese fillings. The flavor was absolutely there there! My filling had no filling to it. It was completely runny. The bread tasted like pumpkin, I was extremely pleased with that. This was also an opportunity to test out my pour spout for my Kitchen Aide mixer that I pick up at the outlet mall. It doesn't clamp down to my glass bowl well, but it stays on good enough that I don't spray flour around the kitchen. No mess around the kitchen, that's all that matters, right? Let me just say, I'm glad I have work friends who like to eat random things like me and who have the patience to try things that even I admit didn't turn out like I hoped, but are reassured that when I say the taste is spot on, trust that, not the watery nature of my fillings! Next time, I'll have to add more powdered sugar and see if I can get it to perk up a bit. With Brussels sprouts growing in the garden, I turned my Pinterest explorations to finding some recipes to cook them. I had a friend who made some amazing ones by cooking them in the drippings of a roast we cooked one evening. That's pretty much what got me enjoying Brussels sprouts. My exploration led me to A Family Feast's website with her Oven Roasted Brussels Sprouts with Bacon. Who can go wrong with bacon? Its a simple recipe, cut sprouts in half, cut up bacon, sprinkle with olive oil and broil in the oven. Since I had some freshly picked tomatoes fresh off the vine, I tossed them in too. I put everything on a foil wrapped baking sheet and popped it into the oven. 25 minutes later, super awesome Brussels Sprouts! I served this awesome side dish up with some homemade gumbo that I thawed out. Made that up last time there was a nip in the air. I'm definitely making this dish again when I harvest more sprouts! Like normal, I was browsing around Pinterest when I found an interesting sandwich combination consisting of hummus, meat, and spinach in a pita pocket. Hm, I thought, I've got that sitting around! Sadly, I can't even find where I saw that pin! It might even be that I was pulling together a couple of different sandwiches to use up my leftovers. Anyway, it looked really awesome in my lunch!
